These mini cheese pizzas are a lunch staple in our house. They are super easy to make and just the perfect size for kids. My secret? They’re made out of small pitas!
I actually saw this idea on The Biggest Loser Ultimate Workout – Xbox 360 game of all places. One of the tips that came up one day when the game was loading said a healthier option to pizza was to make them using pitas instead of dough. I tried it and they are delicious! You’d never know that the crust isn’t made from dough!
I buy the small pitas from Trader Joe’s that are about 5-6 inches wide. I stick the pitas in my freezer and only pull out the number I need to make. 30 seconds in the microwave thaws them perfectly and they’re ready to go.
To make these into a heart shape, simply use kitchen shears to round the top part into a heart.
Next, spread a small amount of pizza sauce around in a heart shape. I’ve found the less sauce the better. Too much sauce makes for super messy hands later.
Then, sprinkle shredded mozzarella cheese on top of the sauce.
Pop them into a preheated oven at 400 degrees for 8-10 minutes or until cheese is melted and they’re done!
These would be a delicious, healthy option for a Valentine’s party or just to put a little fun in your kids’ lunch!
